Many of you know that I have worked as a professional chef for several years and that the last 4 1/2 years of my career have been spent at The Mirepoix Cooking School as The Director of Culinary Education.
Mirepoix and its owner, Tom Violante, Jr., have been my priority since January 2, 2007. I went to Mirepoix to develop a school and build a business - both literally and figuratively. Mirepoix has ben my obsession for as long as I can remember. In my mid-twenties, when everything seemed to be in a state of flux from where I was living to who I was dating, the only constants have been Mirepoix & Tom.
Time and circumstance have a way of changing the way we see ourselves and on January 5, 2011, with a conflicted heart, I realized it was time for me to leave the comfort and safety of my nest and fly out on my own. Of course, it took several months for me to work up the nerve to make the leap, and now that I've worked up the courage and confidence, Three Little Birds Fine Foods will take flight on May 15.
I hope you, my readers, loyal friends and customers will share this exciting time with me as I make the most important decision of my career. Many of you have made my nest one of the happiest places I could ever be. You've celebrated the successes and encouraged me during the challenging times. I hope that now as I take the plunge, you'll circle the tree and give me your support from the ground.
